The Ministry of Municipalities and Housing has issued a restaurant requirements document (1446 AH / 2025), divided into sections covering licensing, site and technical requirements, and operational requirements. In its operational part, the document states that water used inside a food establishment must be potable, and available at a pressure and temperature suitable for preparation and cleaning.

The document also deals with ice production, distribution and storage equipment. It requires that this equipment be kept away from sources of contamination and cleaned and disinfected internally on a regular basis. That matters because an ice machine usually draws its water from the restaurant's own supply, which means from the tank.

Where does tank water go inside a restaurant?

Before cleaning the tank, draw a simple map of every point the water reaches. These are the points to flush and check afterwards, and skipping even one can bring the problem back.

  • The ice machine: the most sensitive point, because ice is served directly in drinks.
  • Coffee machines and drink dispensers: they have filters and small internal tanks that need flushing.
  • Vegetable and meat washing sinks: the water touches raw food directly.
  • Water heaters and dishwashers: they take water from the supply and can collect scale and sediment.

A restaurant in a commercial building: whose tank is it?

Many restaurants rent units in commercial buildings served by a tank shared with other tenants. The question then is who is responsible for its cleanliness. The restaurant owner answers to the inspection authorities for the water inside the premises, but the tank itself belongs to the landlord. The practical solution is for the lease to state how often the shared tank is cleaned and to require a copy of the report for each tenant.

If that is not possible, some owners install a small independent tank for their own premises, filled from the network with filtration at the inlet. This decision needs the landlord's approval, a check against the site requirements, and advice from a plumber on where to put the tank and connections.
